DAY 107 - MINTY CHICKEN...

When I was a kid, Diwali for me meant being in my grandmas home in Vasai, my mum is the fourth of eight sisters, so you can just imagine what a full house that was.
Diwali meant that we would get sparklers from every uncle who came over to my grandmas post collecting their Diwali bonus and always had the biggest box of sweets I had seen.
My grandma cooked a simple meal, of fish curry and dry mutton and there would be much merriment.
We kids would then light our sparklers , fountains, and then get out our boxes of chakkris, and this weird black tablet little thing that when we lit would grow into a snake, so we got into putting these all over the entrance steps of our house , and then of course the final "Laddhi" of noisy crackers..
That frightened the crap out of all of us..

I never did like them , I still don't do .
We kids then just hung out on our really long verandah , that had a swing , that creaked away into the night as we swung on it.
It was just wonderful, and this memory of us lying on that big swing, swinging away, as we peeked at a black sky , studded with stars , and listen to the rustle of the wind through the palm leaves, is something that has just stayed with me.

Then we would all move into the house and mattresses were laid from one end to the other and we would all sleep there in line, while my grandma moved to her room and would continue talking to all her children till late into the night, while my grandpa would say, "Dokri..bas aata, zhop aata "
There was never any noise, no crackers bursting.
Just the sound of Laughter amongst all my aunts, and stories of what happened during the struggle for independence ..

Gosh , just reliving this,  brings tears to my eyes.
My grandma Rose Mary had the heartiest laugh, she smoked bidies, once in a while, my grandparents were farmers..
And going to their place for holidays was my biggest joy.
Running through fields, having a bath at the well, plucking fruit every afternoon (where we would eventually be bitten by red ants) and then the golas...
To me this was Diwali..
Our way of celebrating it ..
There was nothing fancy ..
But everything real and lots of love and laughter..

I love this festival and as a kid growing up in a very Catholic community, I used to wait every year for Diwali sweets from my friends, it was just so special.
My friends Laxmi, Renita and Kiran, was my first introduction to rangoli ,lighting of Diyas , Puja and vegetarian food.
They were the ones who introduced me to the Dandiya and to Ganpati Visarjan.

This is what I love about my India the most, that we are all so diverse and there is so much we can all learn from one another.

But I actually started celebrating Diwali in full gusto with my friend Mini.
She does the whole hog.
It's just so nice.
And then one year , she said what kind of Diwali is this no one gambles here, and she laid down these mattresses on her terrace , so I was introduced to "teen Patti" and other various card games that I don't quiet remember.
So Mini would light Diyas all over the house, make her full Mathur "Khana" and then drape herself in a beautiful sari, (you know for me she is the sari icon of India ) and then she would saunter around, seeing that everyone is well fed, well drunk and gamble, till some would be dropping off to sleep (me ha ha ha )
This year she is in the mountains , so it's a very quiet Diwali without her.

With Jaya, we would do the full Puja and sing "Om Jai Jagdish" , with her kids ringing bells, and us all singing with much gusto, and then her mum would put Tikkas for all of us and then treat us to an amazing Vegetarian fare, and all the kids just had a blast.

To me this is Diwali
Family, friends,giving thanks and lighting up Diyas..

What I dislike about Diwali,are the loud crackers , and my poor dog Taz sitting curled up petrified in a corner, and the horrible smog the next morning..

Do I gamble..
Nope I don't..
I'm not a gambler , but a risk taker I am ..ha ha ha

Today I took all my diyas and after lighting up my home,and I drove over to my new home, with Zene, Taz and my house help..
Both the boys of the house are out working and camping..
So Zene and me went and light Diyas all around our new home..
It now feels like home, even though it's still filled with cement, paint and not yet complete..

So before I say bye, I just want to share with all of you this lovely Chicken recipe that my vegetarian friend Jaya gave me..ha ha ha ..yup..

It's something that is so yummy and full of flavour, it's not spicy so great for kids too..

And if you want to spice it up , just slit a green chili and have it with every bite, it's totally yummy.

DAY 79 : SPY PROOF TART....

Kids are too cute..
Specially sometimes when they believe all the wild stories , I make up...
Yesterday was one such day..
As my sister is down with her kids...
Its a full, crazy, running, screaming house...
And I wanted some peace..
And some "me" time..
Feel like a Tart ?????
So I decided to make "Flaky Pastry"...
I did not know what I'm going to make with it..
But the whole process of making flaky pastry is very soothing and calming...
So I got together lard, butter, flour , salt and water and started....

And then in the middle of it all, when my hands were into flour , Zeke and Kyle, decided to run around the kitchen and play "Super-Spy"..
I tried getting them out, but no amount of asking, scolding and then later screaming, was helping..
They were talking loudly in the same room to one another on "spy-talkies"

I thought I'm going to go crazy..
And so changed tactics...

Called them and told them I have a secret to tell them, they love secrets..
And so I whispered "I'm a secret agent"...
Zeke and Kyle..stopped talking..
Then Zeke's eyes lit up...
And Kyle looked at me with a smile, I think he must have been saying"all lies" in his head...

But in the next 5 minutes, they were both eating out of the palm of my hand...

I told them that there are cameras all over our home, so I cant talk loudly..
As I'm really not allowed to tell anyone , as it could be dangerous..
And that I have a special phone that connects me to the main office..
And this, went on..
I put my pastry in the fridge to rest...

And was wondering what to make for dinner...
and had tit-bits of stuff at home..
So decided to put it all together and make a tart..

Ingredients...

Onions -1/2 kg
Tomatoes- 2
Bacon Rashers or Chicken salami or Chicken sausage- about 150gm
Green chili- 2
Garlic chopped- about 6
Lamb minced- 1/2 kg
Milk - 350 ml
Eggs -2
Paprika - 1 tsp
Garam Masala or Mixed Spices- 2 tsp
Salt and Pepper to taste
Butter - 2 tbsp
Olive oil - 1 tbsp
Wheat flour - 1tsp

Heat a tablespoon of butter with the olive oil in a non -stick pan...
Keep 100 ml milk aside..
To the remaining milk add the eggs and beat it well and keep aside...
Add the chili and garlic..
Stir it a bit and add the onions..
Let the onions get very slightly cooked then add the paprika, garam masala and some pepper...
Add the Bacon rashers or chicken salami and the minced lamb..
After about 15 minutes add the tomatoes
Cook it all really well for about 10 minutes more...
Add about 100 ml of the milk and let it cook for 10-15 minutes more , till it all gets creamy...
Take it off the fire and add the wheat flour to it..
Give it a very good stir...
Cool the mix a bit..
Then add the remaining milk that has been blended with eggs..

You get flaky pastry in the market..
If you live out of India..
In Mumbai , some bakery's sell it too..
And so just buy it ready made..if you can...because its a long process to make it...

Roll out your flaky pastry to the size of your tart case...
Do not make it too thin, I kept mine a little more than 1/4 an inch...
Prick the base of the pastry , this stops it from rising while cooking ...
Add the filling , but not till the top...as it rises while baking...

Grate some mozzarella cheese over it ..
And bake it at 200 degrees for 35 minutes if its a 7 inch tart ring ...
And a little more depending on how big a tart you are making..
Cook it till you see that the flaky pastry is nice and brown and has left the sides of the pan..

The cheese will burn, please do not let that scare you ...

So while all this got ready, I was being asked questions about my first spy assignment!
Do spy's only wear black?
How many gadgets do I have..
Do I have my own aeroplane?
Do I have a partner?
How many cases have I worked on?
Do all spy's do yoga?
Does my phone and my car transform?
Do my boots help me fly?
Am I stronger than a guy?

And then like "Calvin and Hobbes"..they made a transmogrifer....
Out of a carton...and very happily chucked all my books out of it ..
And used up all my little note papers to write codes and draw maps..
So now I have two little secret agents Z1 and K1..
Who have begged me to tell my boss to "Please make them part of the spy union, PLEASE ...PLEASE PLEASE..." were the exact words...

So I told them, that there are rules..
1. You cannot tell anyone, that I am a spy..
2. You have to first learn to talk softly..
3. You have to be fantastic in your studies, specially since you will need maths, science, history and geography in all field work..
4. Have to learn at least one foreign language..
5. Need to play at least one musical instrument(Zeke says drums, so I'm doomed)
6. Have to be super in martial arts..
7. Must know how to cook.
8.  Must be able to make friends with animals..
9. Must treat all girls and everyone smaller than them with care.
10. And the most important of all, must start with first listening to Mama, because you cannot do anything you want when you work as a spy, you have to follow orders and listen to instructions...

Ha ha ha , I was rolling on the floor laughing inside my head, looking at the wonderment in their eyes..
And then I notched it up a bit..
I looked and Zeke and told him"Baby last year, when I went to London for my chefs course"...
"You were on a secret mission???" he completed...
"And you were only pretending to cook?"...
Ha ha ha I love little boys...

And at the end of 30 minutes, the tart was ready..
Steaming hot and the aroma was bursting with excitement...
Zene, who also wants to be a trainee spy, helped me set the table..
Zeke , Kyle , Cruz and Zene...
Sat down and ate without any "choo-cha"...
"Awesome Mama, awesome"..
I think that's their favorite word...
Then I pretended like it was some work call , and told them that , they are being watched and if they follow all the rules, then after they have finished their studies ...
They may get chosen as secret spy's...

I sometimes am amazed at my imagination...
And more at the innocence of little kids..
They live life full of wonderment..
And I live it with them...
I love today...
I love tomorrow..
And I love my yesterday...because it made me find so many little things about me today ...


And so as I take a bite, the crunch of the flaky pastry and softness of the filling...makes a wholesome tasty bite of complete comfort...
I'm thinking this can get very very addictive...
Hmmmm ...its the perfect meal for a Saturday night..
And so here's presenting, "Spy Proof Tart"...hot out of the oven and straight onto a plate ....

DAY 67 - GIRL TALK



I love visiting vegetable markets ...
And arguing with the vendors...
Even though I really do not know the prices of most of the things in the market...

But today went in search of the elusive fresh arugula leaves that I'm completely crazy about...
But found a whole lot of other vegetables and MANGOES...
So I stood at the vegetable pile and looked up to the fruit-wala who was selling them and pulled myself up to my entire height of 5.2", and in my most knowledgeable voice said,"Bhaiya, kitne ka dozen...khareedne ka price bolo"....
He just peered down at me and said...Pandhra Sao ...
Did I hear right rs.1500/- for 12 tiny mangoes...
Bloody hell...now what..
So I looked back at him, and made inane conversation about how,everything is so expensive these days...
And then picked up the rest of the vegetables and leaves ..and was getting prepared to leave...
When he said, the golden words,"memsaab... Bonnie kar de "...
Which basically means that since I'm his first customer, he will make the price better and so, I went away smiling with 6 Alphonso mangoes for Rs 550 /-...

And so yesterday after I finished assembling my red velvet cake...
I sent a picture of it to my friends..
Which basically was my non-verbal way of saying, "come over, share a few laughs and calories"
And in the night, a few of my friends came over to devour it...

Mini asked me to keep a piece for her and was coming over for lunch...
So I did..
And also made a simple salad and vegetables with quinoa and some barbecue chicken...
Because I know she likes to eat healthy and frankly I have been trying different things with Quinoa everyday, but dont really get down to taking a photograph..
But I did today so here goes...

So here goes...

ARGULA SALAD
A medium bunch of Argula leaves...pick the leaves , wash and keep with a few cubes of ice in the refrigerator..
1-orange peeled and sliced...
About 8 slices of mozzarella cheese

Dressing
Balsamic vinegar - 1 tbsp
Extra virgin olive oil -2tbsp
A tiny squeeze of lime
1/4 tsp mustard
Fresh orange juice - 2tsp

Let it all emulsify really well , store it in a glass bowl that you must cling wrap and keep in the fridge...

QUINOA TREAT
Cooked Quinoa - a cooked handful
Chili flakes -1tsp
Mushrooms-a packet
Cherry tomatoes -8
Asparagus -5 spears, par boiled
Broccoli - 8 florets, par boiled
Sprouts - a handful
Mixed beans - boiled..a handful
Garlic - finely chopped ..3tbsp
Dried Oregano - 1 tsp
Dried basil - 1 tsp
Fresh basil - - a handful


In a non stick pan, spray some olive oil and add the garlic , do not let it burn, then add, some oregano , chili flakes and some dried basil, add a handful of fresh basil too and then add the sliced mushrooms, when they are cooked, add the sprouts and give it all a quick stir, mix all the rest of the vegetables and the quinoa..
Taste it to adjust the seasoning , and it's ready...
I love it with a squeeze of lime, at the end...


BARBECUE CHICKEN
Chicken legs - 2
Mixed spice powder or garam masala - 1tsp
Garlic - 1 tsp
Vegetable oil - 1 tbsp
Yogurt -2tsp
A dash of Worcestershire sauce
Oregano -1 tsp..

Marinate the chicken well well with the above ingredients...
This is quite a mild marinade...
As did not want any over powering tastes..
Let the chicken rest in a zip lock back for at least two hours if not over night...

Cook it over a barbecue, and baste it while doing so..with a mix of butter and olive oil...
Or then just cook it in a pre-heated oven at 190 degrees for about 30 -35 minutes...

When you are ready to eat..
Mix the Argula leaves with the orange wedges and pour your dressing over it and mix it very gently with your hands..
Roast some pine-nuts and sprinkle them into the salad..
Add the mozzarella and sprinkle with some freshly grated Parmesan ..

And serve the quinoa piping hot , with the chicken ...
This entire dish has a very simple taste ...because nothing is over flavored ...
So it is ideal for a light afternoon lunch ...
And yes it's flavorsome and feels very light on the tummy...
And so you can most happily gorge on some very yummy dessert, followed by green tea and plenty of girl talk...

So that's what Mini and me did......
Talked about food, kids and Boy's on the side...ha ha ha , but guess that's a blog on its own..

DAY 62 - ALL ABOUT EVE...HEALTHY QUINOA SALAD AND BAKED MUSTARD CHICKEN..














And where do I really begin...
well I met Eve for the very first time on the 24th Sept 2011...
I did not have any assumptions or preconceived notions of , how she would be..
But when I rang her door bell, she opened the door , with a bright , "helllloooo" , something that I got sooo used to and also miss today...
I was greeted by this lovely bobbed silver haired woman, in trousers and a light blouse...who looked at me and said , "is that all the luggage you have?"
Well did not want to frighten her with what all I'm capable off so said"yup" and she and me proceeded to pull my bags in, for some reason , we both think of our selves as 'super-girl'..
So after I beg her not to carry my bags and she does not agree, we trudge up to the room , where I will spend my next 11 weeks in...
I loved my room on sight, it was small, had a cup-board , a bed and a study table with a window to the world...and a terrace...yeah yeah yeah...
I was a happy bunny...
We chatted a bit ...and like a good Brit-lady, she scurried away and left me to unpack...

The next day she took me on a tour around Woking, so I could find my way to class and to the Market or the mall...
Remember she took me to Carlton Road and stopped there...
And she said, so this is the famous Carlton Rd, and I looked at her and said "for what" and she looked at me incredulously and said, "this is where your cooking school Tante Marie is, so better don't forget this..."
Ha ha ha ....
Then we continued chatting 19 to a dozen and then she bought me Hot Chocolate, showed me the most IMP place in Woking the MALL ha ha ha...
Then Sainsbury,Boots , the railway station and various other necessary places like clothes stores...

Eve is a girls , girl and I realised , I have found an amazing person to live with, was just worried she may get fed up with my constant chatter ...
And then also told her to please not leave the house and go , as I'm petrified to sleep alone...
She looked at me like I'm nuts...

And I realised that she is Aries like my mad friend Sandy back home...
So being a true blue Sagittarius who believes in sun signs and all that Jazz..
I did some stupid calculation , told her we are both fire signs and she was up for the chatter and we had a lovely time...

This first week I came home with French vocabulary, that was really French to me ha ha ha...
And so Eve used to teach me correct pronunciation, but then after some time, I would go all about the place and she used to say learn it like you will remember it...
Then I started getting all the baked goodies home to Eve...
And she would taste a wee bit , because she always mostly ate right..
So I used to tell her, "we need to distribute the calories , so none of us get fat"....

I went to my First ever Ballet with her and her sweet partner Ralph, who is Virgo, so yes, occasionally we have talked about the various Virgo's in our lives and how different they are from Fire signs, I should know , my dad is one... And how this and that..and the other...
But Ralph was a doll..

And when I came home to Eve's with Goodies, I knew Ralph would always taste the calorie filled stuff and enjoy it...
So it made bringing home all the goodies worth while...

Well I went for my first ballet about Cleopatra, with Eve and Ralph...that was beautiful...

Well Eve would always ask me if I needed to be dropped to the train station on Saturday...
She did not have to but she always did...
Very time I had a problem , I would come and spill the beans to Eve...
And I would tell her, this is what I'm gonna say and this is what I'm gonna do..
And she would raise her eye-brows and say , "Young Lady,I don't think so, if I were you"....

And well she also said that her mum used to tell her that she would get quieter as she got older, which I never saw...
She was one of the most fun girls I hung with...
We would go window shopping at the drop of a hat...
She was spontaneous, always looked spiffy and drove like a fiend ha ha ha ...
And every time I shopped, "she would talk about the great depression that I kind of knew nothing about, and she would say, well thank you for helping my economy" ha ha ha

She would make me keep my credit cards home...
Take the taxi service card , before I left home , and always tell me to be safe....
Then she would say , I'm sorry I'm not your mother, but just needed to tell you this"adorable and absolutely loving, I just fell in love with this Eve and used to look forward to spending time with her , whenever...
And like my mum she would see that my uniform was impeccably kept ...
And we used to shop for fruits, groceries and general gifts to take home...
Eve was all heart always, I never ever saw her with a frown or in a bad mood ever..
She loved her garden like my mum, looked after her plants, fed a fox , I heard somewhere in conversation one day...and was the best land-lady a girl could ask for..
She always encouraged me to travel and when I was to go to Paris , she gave me books and maps...
I used to share most things with Eve, she was a modern woman but also so beautifully old fashioned..

So today am gonna share with you a recipe, that I made Eve a lot while I was practicing for my 1st practical exams...
And since she was very particular about what she eats ...
Have a lovely fresh Quinoa salad and a Mustard Baked chicken...

INGREDIENTS..
Quinoa - 1 cup
Hand-full -broccoli red and yellow, bean sprouts, mushrooms and assorted beans..
1 1/2 cup Chicken stock
1/2 lime squeezed
Oregano
salt to taste

Baked mustard Chicken
6 legs of chicken with or without the skin..
3 tbs olive oil
2 tbsp grainy mustard
Honey
2 tsp mixed Morrocan spice..
Salt to taste.

Method..

QUINOA WITH VEGETABLES...
Boil the quinoa in the chicken broth till nicely cooked..About 10 minutes...please do taste it..and when done, fluff it up a bit with a fork...
Par-boil the broccoli
Just stir fry the rest of the vegetables , sprouts and beans with a little olive oil, or a little more depending on how healthy you like your food to be..add oregano to the vegetables..
I love to roast pine- nuts and add them to quinoa..
Mix the quinoa and the vegetables , and add the lime and mix it throughly..
Sprinkle with pine nuts..

BAKED MUSTARD CHICKEN

In a glass bowl, mix the morrocan spice, grainy mustard, olive oil and honey to the chicken legs and let them marinate as long as you possibly can.
But at least leave it for an hour...so that the chicken is well flavoured.
Bake in a pre-heated oven at 180 degrees for at least 35-40 minutes..

WELL Eve she ate my exam chicken 3 times before I finally made it for my exams....
She was always encouraging and so loving that frankly I felt at home with Eve...

So while my chicken was baking in the oven and I was multi-tasking all my par-boiling and stir frying activity...was thinking about Eve..

In the evenings, I would sometimes hear Ralph talking to Eve and she laughing hilariously .
It just felt so nice to hear them...share this beautiful companionship...
At the end of the day , is that not what love is all about...

Eve's home was always filled with laughter...
I always showed her all my shopping...
And when we went out shopping together, she would ask me, should I stop you, or should I not interfere, so we always made a pact that she should stop me and I always ended up with something new....

Went with Eve for a fashion show one day, and fell asleep...
And when I stirred awake , she said," go back to sleep, you are not missing much"...
Ha ha ha hilarious...
She helped me choose a beautiful gown, the one I have posted here on the blog, which when I wore I thought of "YOU" first Eve...
You would have liked how I looked ..ha ha ha


It was really cute, but every time I came home after class, would hear Eve say, "There she comes , that girl,and wonder what she has to say today ."
She would talk of me in third person, like I was not there...
There is another very dear friend of mine who also does that..who I really miss a lot...

And as I would walk into her hall, like I did when I was in school with my parents ...
And show her my food for the day, and then tell her about it, and then pour my heart out if anything was bothering me...
And she always gave me time..and that's what made me feel like home..

When I had over shopped and was packing my bags , before coming home, she came with me to buy my bags , not once or twice...but thrice...

She always gave me a napkin while I ate...and said, sit-down and eat properly...
I loved every moment of fussing that she did over me...
I love that feeling of having someone, who was so my own, so far away from home...
I will never forget, when I came home from my exams, she was just full of love and I could see , that both Eve and Ralph really do care for me as much as I had come to love them...
They were my family away from home and I can say without a doubt that my land- lady Eve is a loving Star....
And I was really lucky to get her...
Thank you Lorraine for making that call...

Now I can smell the lovely chicken baking in the oven..
Its come out looking crispy on the outside but is really soft and juicy...
Kept the quinoa salad nice and warm...

All food should always be eaten fresh and piping hot..
that's when it tastes OH SOOOO YUMMM...


And so todays meal, I dedicate to Eve who was my friend , therapist, psychiatrist, travel- encourager, French teacher, shopping-buddy, wine-buddy, food-taster, smile bringer and the most amazing land-lady a girl could have ..

MUNCHIKEN GREEN PEPPERS STUFFED AND HAPPY



Woke up this morning, and went out running, before i could change my mind ,because really want to start some kind of exercise, and running is what makes me most happy, was out late at my friend Amit Ashar's photography exhibition, and although i had dinner , we all ate again , thanks to Mini....
The food was yummy, done by my dear friend Chef Vicky, who is the sweetest and has promised to teach me how to make bread, which is something i have been trying to do at regular intervals, today is a jam packed day, besides the regular, going shopping for some Lucknowi stuff and enrolling my self in a Spanish institute...
So the entire family including my puppy Taz is excited about me learning a new language, leave alone the fact that Arshad and Mini think that i should first get my Urdu diction in order, but like my friend Jaya pointed out to me yesterday, i ask everyone and their pets for advice and also listen to their words of wisdom very intently and then thank them profusely for being there and then in due course of time, drive off in my red beetle into the sunset....hmmm
But life is not as easy as making stuffed green peppers with mince is it ??????

2 dozen small sized green peppers
cheese
olive oil
a kg of ragu sauce (please check the lasagne's recipe to make it)

Pre-heat the oven at 200 degrees for about half an hour...
In that time , cut the top of the capsicum , and clean the insides, do not pull out the stalks , they look quite cute ...
Stuff each green pepper with the ragu sauce and cover it with the cut portion of the pepper like a lid, sprinkle it with a little rock salt and olive oil and garnish with some cheese and cook it at 160 degrees for about 30-40 minutes or till you feel the green pepper is well cooked..and the cheese has melted over the pepper ...
Its like a mini meal on its own , if you want to avoid the carbs..

This dish somehow reminded me of the "Wizard of Oz" and all the little people in Munchiken land, felt that very soon all the peppers would march out of the oven singing, ha ha ha , YUP i do have an imagination, ya some people think its crazy but i think its a "healthy" imagination..
We'll now I'm picturing all the peppers running around the kitchen because they do not want to be devoured but , I'm chasing them on my broom stick and putting them back in the tray, oh we'll methinks running early in the morning could be detrimental to my sleep cells and so my mind is running amuck...HELP....

DAY 25: BAKED CHICKEN ALA MAMA


Now this is something that is going to get passed on to my Zeke and Zene too, because its part of every celebration at home, i have seen my mum making this since i can remember , and it is always tasty and really easy , infact its the 1st dish that i learnt from my mum that i got right at the very 1st shot,we'll i have modified and un-butterfied it, but the essence is the same..

It's great to eat ,really healthy and can be had with bread , pulav rice or just some plain salad ..
My mum used to fry potatoes on the side , which were finger-lickin good, but im baking garlic and tomatoes to mix with my salad...
What am i celebrating today ..well..LIFE!!!!!!

Baked Chicken Ala Mama
1 1/2 kg chicken full with skin
Curd
Garam masala
Salt
Lime juice

Marinate the chicken by rubbing all the above ingredients on to it and leave it overnight in the fridge

Stuffing
Chicken liver minced
1 slice toast cut into pieces
1 onion minced
1 chili
little peas
7 cashews lightly fried
10 kishmish lightly fried
salt

In a non stick pan, add a little olive oil and cook the onions and the chili, when its nicely done add a tiny pinch of garam-masala ..
Then add the peas and really cook well..
Add the chicken liver last and salt... when you feel its all done, add the cashew and the kishmish , and toss it around....add the toast and let it soak in all the juices..
let it cool completely.

Take the chicken out of the fridge at least an hour before cooking, then in the hollow of its stomach, fill in the stuffing and stitch the opening of the cavity ...
I wrap the chicken in tin foil ,so it kind of does not get too dry and also is kind of steams , then open it when its nearly done so that its browns up
Bake it for about an hour and a half...then pierce it with a blunt knife and if it goes through smoothly, then open up the foil and increase the temp to 200 degrees , pour a little olive oil over it and brown the chicken...

Take it out and have it piping hot with some salad and some baked tomatoes and garlic on the side
We just did....happy and happy

DAY 19:KANGKONG WITH CHICKEN.


I have decided that on Sunday, I'm going to be a good Catholic and keep the Sabbath holy , so hence no cooking for the blog, yesterday i was feeling the need for some answers in life and so took my kids and went to Mount Mary's to pray and just ponder, Zeke ,Zene and me bought coloured candles and went and paid our respects,prayed and felt very very blessed, protected and wonderful..
We then went to our favorite haunt "Candies"to stuff our faces with all we love, i was so happy when Zene said ,"mama you make these muffins and i love your muffins"...so in the middle of sandwiches and chocolate tarts, and running for pee pee and she's not sharing etc etc
I decided to go vegetable shopping at Pali Market, i went mad buying Thai spices and then i spotted "morning glory " a veggie that i simply adore, i really felt like "Kylie Kwong" in China, unbelievably happy but still well behaved , very unlike me ha ha ha , did not want to frighten the vendor with overwhelming happiness at the sight of these greens you know ,wanted to scream like a hooligan and do a cartwheel , but did not scream as i have kind of grown out of my hooliganish behavior and i don't yet know how to do a cartwheel, but decided there and then, that that's what I'm making Monday evening, because i like having light dinners....

Kangkong with Chicken
1 clove finely sliced
1 birds eye chili
2 tbsp fish sauce
2 tbsp soy sauce
1 chicken leg
5 tbsp oil
150 g morning glory
50 g mushroom

Mix half the garlic, chili, soy sauce, fish sauce and a little oil and marinate the chicken and keep it aside...
Heat 2tbsp oil in a wok until its smoking, add the chicken and cook it for about 8-10 minutes or till it is cooked but succulent..
Add the remaining oil to the wok, and when it is crazy hot , add the morning glory and cook for about a minute tossing it, add the soy sauce, chili, fish sauce, mushrooms and continue to cook till it is soft and a beautiful edible green, stir in the chicken , add salt and pepper and , have it nice and hot....

I used chili oil in my marinade , because i like it HOT...
This dish tastes fresh and clean and like something you would eat at an exotic diner , also i did not use too much oil , and like the fresh taste of greens infused with the really well-flavoured chicken, basically i love ,love ,love kangkong ha ha ha

So with lotsa love and tender care "Kangkong with Chicken "piping hot from "Maria's Kitchen" !

Sunday bonus DAMIEN AND JOANNA FERNANDES






Yup! this is my mum and dad.
And they are the best any kid could ask for, they worked so hard all their life and prayed even harder and that's why we are so blessed today. We did not have a fancy life and yet it was filled with all that is good and wonderful, we had all we needed not what we wanted , and that's why probably i am what i am today.
My parents instilled values and good behavior and too many morals for my own good....
They always told me to "treat everyone like i would want to be treated", and "to do what i want but never dis-respect or hurt your family".
I never got pocket money , and i had to reached home at 12'midnight no matter what time i went for a party, and gosh! it used to make me so maaaad, but today ,i thank them with all my heart for all that they did and continue to do for me ...
I'm blessed that i have 2 guardian angels in my life to look after me..
If i can eat 24/7 today and am still hungry ,its because i got that from my DAD and thank his amazing genes that i do not put on weight very easily and if i can cook today its because my mum is awesome in the kitchen and when i think of her in our kitchen i see her tossing spaghetti , with vegetables , boiled eggs, cheese, butter and ham into a huge plate that we would devour like a pack of hungry wolves, its my favorite childhood transporter , "MY MUMS CHOW"


Mummy's Chow
Spaghetti
Handful of broccoli, baby corn , french beans, peas, carrots and red and yellow peppers,all diced.
Eggs
Chicken sausages /ham/ bacon diced
Salt to taste

Cook the spaghetti and keep it aside
Heat a vessel of water and when it is boiling , dunk the vegetables in ,a bowl at a time, as all cook at different temperatures, do not over cook them .
Then heat a small fry pan , and put a little olive oil and butter in it, put all the vegetables in and let the butter coat them..keep it aside
Do the same to the diced sausages/ham /bacon.
After that warm the spaghetti if it has gone cold, and then add to it some butter and some cheese spread , for this all to melt into it, it actually has to be just about drained , so i time it very well.
Boil eggs for exactly 7 minutes and just cut in 2.
Mix the spaghetti , vegetables eggs and the sausages together and eat it while its still hot.


That's exactly what i did and Yeah the kids and me loved it, we are now sitting happy and satiated, i think this is a good way to get the kids to eat their vegetables and their eggs ,GOSH ... my mum tricked us into eating veggies ha ha ha
Just like I'm doing now, so i made plates that looked like clowns and it was fun and tasty

DAY 7: ZZ'S FAVORITE LASAGNE...



And on the 7th day when God saw all he had done , He rested....
But since I'm not God i was up at 6am , also because i could not sleep and started making all my preparations for the lasagne, i love Sundays, its family time , good food time and lazying around time, and so decided to make a one dish meal, and so picked up this recipe from my favorite Italian cook book beause Zeke and Zene love this so here's presenting ,

ZZ'S favorite Lasagne in the whooole world

Bechamel sauce (white sauce)
500 ml milk 2 bay leaves
3 cloves
1 small onion
1 tbsp whole wheat flour
full fat cream
a pinch grated nutmeg
butter

Put the milk in a non stick pan over a medium flame and add to it the bay leaves , cloves, onion, well i also added garlic to it and 2 peppercorns because i always do when i make basic white sauce, then after it is well boiled and you can smell the beautiful aroma of the spices , take it off the fire and strain and keep aside, then butter a pan, stir in the flour n cook for a about a minute , then gradually stir in the flavoured milk bit by bit, then put some fresh cream in it (that collects on top of the milk after you boil it or a packet variety ), i always stir in some cheese , but u don't really have to , then take it off the flame and season with salt and nutmeg.

Ragu Sauce
olive oil
2 garlic pods
butter
2 large onions chopped
4 celery sticks
175 gms chicken bacon
500 gms minced lamb
2 tbsp tomato puree
1 tbsp flour
400 gms chopped tomatoes
150 ml chicken or meat stock
150 ml red wine
2 tbsp dried oregano
1/2 tsp grated nutmeg salt and pepper


Heat a little olive oil and butter in a non stick vessel, add the onions and chicken bacon and cook for about 5-7 minutes.
Then stir in the garlic and the mince meat and cook till it loses its colour, then increase the heat a bit add the tomato puree , i always add i dash of ketchup, the flour and cook for 2 minutes.
Stir in the tomatoes , stock and wine.
season with oregano and nutmeg, cover and let it simmer for 45 minutes , its now ready to use.

I love the delicate smell of nutmeg , I also add basil leaves , because to me no Italian food is complete without basil.
Then pre heat your oven to 200 degrees for half an hour .
Take a beautiful oven friendly dish and arrange sheets of lasagne at the bottom , then i put a layer of mashed potatoes because the kids love it, over that a generous helping of the ragu sauce , i also add a layer of spinach, some white sauce over it and grated mozzarella cheese, then over it another layer of the lasagne . i do not add any more layers of mashed potato, so lasagne , white sauce,spinach , cheese , ragu sauce.
i finish it with one last layer of lasagne, white sauce ,spinach some basil and then the mozzarella cheese and bake it at 170 degrees for about 40 minutes or till the sauce bubbles and the cheese turns a nice golden brown and dark in some places.

It's always fun to eat a lasagne straight out of the oven, and that's just what we did , put a little mat out on our terrace and sat down and bit into our Sunday "lasagne", it feels so good when the kids eat with huge smiles on their faces and ask for seconds .
Making lasagne is tedious , but the end result is yummy.
So today on the 7th day of my cooking "ZZ'S FAVORITE LASAGNE" from "Maria's kitchen"

I Love Italian...



Now that i started cooking,just could not stop at just one dish ,so also made spaghetti with meat balls in a tomato sauce, which has come out pretty yumm...

Spaghetti and Meatballs
125 gms bread crumbs
125ml full fat milk
1 tsp butter
1 tablespoon wheat flour
2oo ml home-made chicken stock
5 large tomatoes, boiled , mashed and strained
1 tsp sugar
1 large onion
250 gms minced lamb
1 tsp paprika
olive oil
250 gms spaghetti
salt and pepper

The aroma of the fried meat balls were really something,i was going mad and jumping in my kitchen and my taste buds were running riot, though i added a very little flavouring to the mix....
To make the meatballs ,I put the milk into the bread crumbs and kept them for some time then added the mince and and onion and added Keya all purpose seasoning to it,did not add paprika because my kids were going to have it, added a little salt, made them into little balls and fried them with little oil.

The 1st batch of meatballs kind of broke when i was trying to turn them over not all of them but a few, so for the next batch , i did what my mum does , i dipped each meatball into an egg batter then rolled them onto the bread crumbs and fried them, this batch of meatballs , behaved themselves and came out roly poly and beautiful brown.

I then added the spaghetti to boiling water with rock salt and a little olive oil, and after it was cooked ,I drained the water and tossed it with a little olive oil over a full flame, and kept it aside.

Made very basic sauce , put butter in a pan added onion and garlic because i love the aroma of garlic ,and like a little textue to my sauce, i then added the flour to it, cooked it for a bit , added homemade chicken stock to it boiled it , then added the pre boiled tomatoes that i put through a strainer, added basil , salt a dash or oregano and a tablespoon of ketchup and a spoon full of sugar n have fresh basil aroma wafting through my hot kitchen.Yes i did not stick to the recipe because i like yo do my little thing and make it mine...
Then put spaghetti on my plate, and spooned the meatballs over it and then the piping hot tomato sauce....

Risotto Style Fusilli
200 gms fusilli
1 big onion
1tsp olive oil
1tsp
butter
500 ml home-made chicken stock
1/4 cup squared carrots
1/4 cup broken florets of broccoli

Even the fusilli turned out fine, added butter and olive oil to the pan then onions and then the fusilli, cooked it dry for a minute and added home-made chicken stock ladle by ladle till it was all absorbed by the fusilli and well cooked, so it looks glossy and the stock makes it taste very yummy and this risotto style of cooking gives it a different texture.
Put the vegetables in boiling water so that they get a bit cooked , i then made them dive into ice water to stop them from cooking any further and to retain their colour , then heated the pan added a little butter and tossed them in ...ok ok i also added a little Parmesan cheese because Mr. Parmesan was yelling at me from my fridge ha ha ha , i then added the vegetables to the fusilli and mama mia lunch is ready..
